Tomato Lemon Parmesan Pasta
Development stage: tried once. Servings: 2.
Ingredients
- 1 medium onion,
- 2 big cloves of garlic,
- 3 tomatoes,
- half of a lemon,
- grated parmesan,
- olive oil,
- half a tea spoon of salt,
- chili sauce to taste (we used habaneros in olive oil),
- 250 grams of pasta (we used Fussili).
Preparation
Boil the pasta until al dente.
In parallel prepare the Sauce:
- Preheat the pan with a generous amount of olive oil,
- Dice the onions, put them in the pan, fry until translucent,
- Cube the tomatoes, add to the pan,
- Cut garlic small or use a garlic press, add to the pan,
- Add salt,
- Add chili sauce if using it,
- Fry until tomatoes are half fallen apart,
Squeeze the juice from half of the lemon, grate a bit of lemon skin if want
fanciness.
Drain the pasta, serve it into plates. Put the sauce on top, cover with
parmesan, pour the lemon juice on top (followed by grated lemon skin if fancy).
