Arroz Chaufa
(recipe for 8ppl)
- Previous day: marinate diced chicken and pork (some 750g each) in olive oil,
garlic, cumin, salt, pepper, soy sauce, ginger. Cook rice (2x300ml cups,
without salt).
- Fry yesterday’s rice in some sesame oil and peanut oil.
- Separately, fry lots of finely ground ginger and add the meat (don’t fry the
meat much, so that it stays juicy). Use frying oil together with peanut and
sesame oils. Remove any juice from the meat and set aside (for use in other
dishes or for serving. This is important to not make the rice too wet).
- Make an omelette and cut it small (10-12 eggs).
- Possibly: fry carrot, red peppers, green beans, aji amarillo.
- Mix rice, meat, egg and veg (if using).
- Add spring onion, oyster sauce, soy sauce to taste. Yum!
